After talkin to a few people it seems a 351 project into a 408 stroker seems to be the way i want to go and its the most realistic goal i can reach right now...what do i need to do as far as motor mounts...tranni...intake...carb...all that stuff...thanks

Oil pan, oil pump and headers are different. Motor mounts are the same. The accessories are in different spots too, but you can use the 302 ones w/ relocation bracket kit which Ford sells. Fortunately you are doing a mustang so there is always a kit to relocate something. You need a new flywheel and harmonic balancer, you have a 50 oz and you need a 28 oz. Remember that not all 351 are roller blocks so if this matters you need to verify that before buying a motor. 302/351 heads are interchangeable, but there may be differences in bolt hole sizes between the heads of each motor. Make sure you heads can be drilled if they are off a 302. Intakes aren't plentiful, but they are out there. There is the spyder intake and Edelbrock makes one too. You can use a 351 truck motor lower w/ cobra upper too. Trick Flow makes one also. Thats really it. Fuel system upgrades would come anyways w/ a 408. The distributor may need to be changed to for a 351 but you would have to check.
Best thing is get a complete 351 roller motor out of a truck if you can find one. Gas powered F 250/350 and some broncos have them. You could also use a 1st Gen lightning motor too. If you google this topic you will find the info you need.
To add to Nick's reply the oil pump pickup tube and you'll definately need a new distributor. They are different. Also all the 351 engines are 28oz. roller or not. I got my roller block 351 from out of a van.

Motor mounts not a big deal, energy suspension, prothane, etc., tranni you should go with a Viper Spec T56, intake go with the Edelbrock intake and while your at it, may as well top it off with a set of Victor Jr.'s, and as far as carb goes, just do fuel injection and skip the carb. Headers will be expensive. I would stick with a nice roller from a Gen 1 Lightning pickup or yank one out of a van in some boneyard that is close to you.
