Use the small block you have, and depending on how its built, supercharge/turbo/or nitrous... alot of nitrous!
big block is a total waste of time and money. only a fool would put one in a fox body. so not worth the time or money. you can do up a 351 based stroker that will handle everything you want and not be a problem on install. You NEMS boys and your big blocks. They have their own application and they don't belong in a fox body when there are so many options out there for less money, better reliability and easier install.
Your brakes will probably need to be manual or hydroboost. The big blocks are as wide as a mod motor and those guys need to do hydroboost because the stock booster won't fit.
choose which ever combo will relistically fit your budget. What ever u come up with multiply it by 1.3-1.5 that is what is will actually cost ya. I have seen it a million times, a 1/2-3/4 done project but out of cash or time. This ruin all the fun. I think its better to use what you have first and if you need some parts, buy what will work for both setups. If u go bbf and fuel injection it will get really expensive. Carbd won't be bad at all. If u can swing it nothing beats a bbf with Kasse heads and some direct port spray. Let it eat!
in response to the prev comment (Terminator motor), have you seen my car? Mod motor = mondo dollars! It no fun to be workn to pay for a bbf, when u can be beatn up on a sbf.
